As the leaves fall and we’re gearing up for winter, our registered dietitians have scoped out some one-pot comfort food dinners that will warm you up while providing a serving of vegetables. Adding bell pepper or zucchini instead of pasta in lasagna or switching white potatoes for sweet potatoes is an easy way to lighten up a classic and warm dinner.
